Mushrooms in Oyster Sauce

List of ingredients required:
(serves 6 people)

14 large Chinese dried mushrooms
2 medium leeks, split and cleaned
3 tablespoons olive oil
4 tablespoons dry sherry
2 tablespoons oyster sauce
1 tablespoon soya sauce
1 level tablespoon cornflour
1 medium onion, very thinly sliced
1 clove garlic, peeled and cut into thin strips
Salt and freshly ground black pepper

Recipe:

1. Soak the mushrooms in warm water for 30minutes

2. Drain the mushrooms and slice them into thin strips, discarding the stalks

3. Cut the leeks lengthwise into thin strips about 2 in (50mm) long

4. Heat the olive oil in a wok or a deep frying pan over high heat and stir-fry the onion for 3minutes

5. Add the sliced mushrooms and stir-fry for a further 2minutes

6. Blend the sherry with the cornflour and stir this mixture into into the pan, together with the oyster sauce, soya sauce, and salt and pepper to taste

7. Simmer for a further 3minutes until the mushrooms are just tender and the sauce has slightly thickened

8. Serve hot with rice
