Langoustines in Ginger Butter

List of ingredients required:
(serves 4 people)

16 to 20 uncooked langoustines
3 oz (75g) butter
2 cloves garlic, crushed
2 level tablespoons chopped fresh coriander leaves
Salt and freshly ground black pepper
1/2 in (15mm) piece of fresh root ginger, peeled and finely grated
Long sprigs fresh coriander leaves

Recipe:

1. Turn the grill on to a medium heat

2. Split the langoustines in half lengthwise with a sharp knife, cutting along the underside so that when they are opened out, the prawns hinge along the back

3. Lay them in a shallow ovenproof dish

4. Mix the butter with the ginger, garlic, chopped coriander and salt and pepper to taste

5. Dot the langoustines with knobs of the flavoured butter

6. Cook in the preheated grill for about 5minutes only

7. Lay them on a bed of fresh coriander and serve with mayonnaise
