Baked Cauliflower Cheese

List of ingredients required:

1 large cauliflower
1 onion
2 oz unsalted butter
3 oz fresh white breadcrumbs
1/2 pint milk
2 oz grated Gruyere cheese
Salt and black pepper
Ground nutmeg
5 beaten eggs

The oven should be preheated at a temperature of 325F(160C)

Recipe:

1. Cut away the outer coarse leaves from the cauliflower

2. Break off the florets

3. Boil some lightly salted water in a large pan

4. Add the florets to the pan and boil for about 5minutes then drain them

5. Finely chop the onion

6. Melt 1 oz of butter and fry the onion for 10minutes

7. Butter the inside of a baking dish and line it with 1 oz of breadcrumbs

8. Pour the milk in a saucepan and bring it to the boil

9. Add the cheese and the remaining butter to the milk

10. Season with salt, pepper and nutmeg to taste

11. Stir in the remaining breadcrumbs and the fried onion

12. Remove the saucepan from the heat and blend in the beaten eggs

13. Fold the cauliflower into the sauce and spoon the mixture into the baking dish

14. Bake on the lower shelf of the preheated oven for 50minutes or until firm
